Go-To Breakfast Burritos

3 Large eggs

1 Large tortilla or 2 Medium sized tortilla

1/4 cup of Monterey Jack or cheddar cheese

1 1/2 Tbsp of finely chopped red onion

1 1/2 Tbsp of finely chopped red or green peppers

1 Tbsp salsa

1/2 Tbsp mayonaise

1/2 Tsp of Big Spice S.P.G.O

1 Knob of butter

Optional: Sausage, bacon or leftover steak.

Optional: Mexican or American style hot sauce of choice. Recommendation: Frank's Red or Valentina

This breakfast burrito is a bold way to start your day. Easy, filling, and time efficient, this breakfast will soon make its way into your weekday breakfast rotation.

The recipe is simply a recommendation. You can get as creative as you'd like with the contents of the burrito. Don't have a red onion or pepper? Well, you can substitute what ever veggies you would like to put in there. We'd love to see your burrito creations, tag us on instagram to show us!


Finely chop up the red onion and peppers and prepare the cheese and tortilla. Place off to the side.

Cook the bacon or sausage by following the package instructions.

Heat a medium sized non-stick skillet on medium and add a knob of butter. Once the butter is melted and bubbling, crack the 3 eggs into the skillet and stir consistently with a spatula for 3-7 minutes or until the eggs cook to your desired doneness. Take the skillet off of the element. At this point, add desired amount of Big Spice's S.P.G.O.

Place tortilla(s) on a plate. Put cheese onto the middle third of the open tortilla. Place the eggs, meat and vegetables neatly on top of the cheese. On the tortilla, beside your burrito fillings spread on the mayonnaise. Finish with salsa and hot sauce over the top and roll the burrito.

Place the burrito back onto the empty egg pan and heat on medium high until toasted. Flip burrito to toast the other side. Remove and plate.
